DC-Based SeoulSpice Korean Kitchen Opening Chicago Location On March 31

SeoulSpice Korean Kitchen, a fast-casual favorite in the Washington, D.C. area, is expanding beyond the East Coast with its first Chicago location opening March 31 at 20 North Michigan Avenue—just steps from Millennium Park and The Art Institute.

Founded in 2016 by National Symphony Orchestra percussionist Eric Shin, SeoulSpice blends traditional Korean recipes with a modern, build-your-own bowl format. The brand, known for its fresh ingredients, customizable rice and noodle bowls, and signature sauces, currently operates seven locations across Washington, D.C., Maryland, and Virginia.

The Chicago expansion marks the beginning of a broader national growth plan, backed by a recent investment from Invus through Artal.

“SeoulSpice is all about bold flavors and fresh ingredients, all in an experience that is fast, healthy and Korean at heart,” said Shin. “With Invus support, we are thrilled to take SeoulSpice nationwide. Were actively scouting prime locations in the Chicago and Washington, D.C. metro areas to bring our signature Korean hospitality and crave-worthy comfort food to even more guests.”

Inspired by Shins family heritage — his grandfather ran a restaurant in Seoul, and his parents opened one of Atlantas first Korean restaurants — SeoulSpice aims to bring authentic Korean comfort food to a wider audience. Popular menu items include marinated bulgogi beef, spicy pork, house-made kimchi, and a variety of house-crafted sauces and vegetable toppings.
