Beyonce’s mother, Tina Knowles, had some trouble at her Texas pop-up eatery after a customer reportedly got very sick from her gumbo.
Knowles, 72, was operating her Mama Tina’s Gumbo pop-up at the Houston Rodeo on Monday, March 16, when TMZ reports a customer complained they got very ill and started throwing up blood after eating the gumbo. They also claimed to experience chills, nausea and a fever.
According to KPRC 2 News, the complaint was enough to get the Houston Health Department involved. The outlet cites records that show the establishment needed to be closed down for a day so that Knowles and her team could comply with safe food-handling orders.

The outlet reports that Mama Tina’s Gumbo was preparing the gumbo at an off-site location, where it was cooled before being placed in non-food-grade orange buckets. From there, it was taken to a freezer at an unlicensed location. It was then taken to a refrigerated trailer at the rodeo, where it was kept to thaw before being served. Knowles and her team were not keeping proper records of the gumbo’s cooling and storage times and one inspector claimed they saw frozen shrimp and crab lying out in packaging that warned to keep it frozen.
Any food that was not frozen was reportedly discarded before the pop-up was shut down for a day. The staff at Mama Tina’s Gumbo was cooperative with health inspectors and made appropriate changes after inspectors said they educated them on corrective action, including rapid cooling methods, datemarking instructions and proper thawing methods.
